Nobody can be and do everything. That's why and how there are people who are in service jobs. So what if you suck at organizing--you've got other things going for you and those organizers are following their own strengths. (One of my best friends does this for a living. I promise you, she gets what it is you are going through. She appreciates the opportunity to make some money even if she is HELPING.)

I can understand your hesitancy to have your friend take a picture of you stripped down. Could you take a picture of yourself reflected in double mirrors? You can get those door mount mirrors for ten bucks apiece.
